Cannelloni with Shrimp – Ingredients and Preparation Method

Ingredients for Shrimp Cannelloni:
- ½ teaspoon of paprika.
- 1½ teaspoons of salt.
- 8 to 10 cannelloni pasta tubes.
- 3 tablespoons of flour.
- 2 cloves of garlic, mashed.
- ¼ teaspoon of black pepper.
- 1¾ cups of cottage cheese.
- 1 cup of frozen spinach, chopped.
- 2 cups of small peeled shrimp.
- 3 cups of mozzarella cheese.
- 1 medium-sized onion, chopped.
Preparation Method for Shrimp Cannelloni:
Prepare the baking dish:
- Grease a medium-sized oven dish with oil and set it aside.
- Preheat the oven to 180°C (350°F).
Make the béchamel sauce:
- In a pot, heat 1½ cups of milk until it begins to boil.
- In another bowl, mix the remaining milk with the flour, stirring well to combine.
- Add the flour mixture to the pot of milk, stirring continuously until the sauce thickens to form the béchamel.
- Remove from heat and pour half of the béchamel sauce into the prepared baking dish.
Prepare the filling:
- In a large bowl, mix the paprika, salt, 2 cups of mozzarella cheese, garlic, shrimp, white pepper, cottage cheese, spinach, and onion. Stir the ingredients well and set the mixture aside.
Cook the cannelloni:
- In a large pot, bring water to a boil, add a small amount of salt, and cook the cannelloni pasta. Once cooked, drain the pasta and allow it to cool.
Fill and roll the cannelloni:
- Lay each cannelloni tube on a flat surface. Place a portion of the shrimp mixture on one end of the cannelloni and roll it tightly.
- Repeat this process for all the cannelloni tubes.
Assemble the dish:
- Place the rolled cannelloni tubes on top of the béchamel sauce in the baking dish.
- Pour the remaining béchamel sauce over the cannelloni, followed by the remaining mozzarella cheese.
- Cover the dish with aluminum foil.
Bake the cannelloni:
- Bake the dish in the preheated oven for 30 minutes.
- Ten minutes before the end of the baking time, remove the aluminum foil to allow the top to brown.
- Once golden, remove the dish from the oven and serve the cannelloni hot.
