Ingredients for Caramel Upside-Down Banana Cake:
- 125 grams soft butter
- 3/4 cup (165 grams) brown sugar
- 2 eggs
- 1 cup mashed ripe bananas
- 2 cups (300 grams) self-raising flour
- 1/2 cup (120 grams) sour cream
- 1/2 cup (110 grams) caster sugar
- 1/2 cup (125 ml) pure pouring cream
For Caramelized Bananas:
- 20 grams butter
- 1 tablespoon brown sugar
- 4 small bananas, halved lengthways
How to Prepare Caramel Upside-Down Banana Cake:
Step 1:
Preheat the oven to 180°C (356°F). Grease a 20 cm (8-inch) cake pan and line the base and sides with baking paper to prevent sticking or burning.
Step 2:
To make the caramelized bananas, place butter and brown sugar in a non-stick skillet over medium-high heat. Add the halved bananas and cook for 2-3 minutes, or until the bananas become soft and caramelized. Spread the caramelized bananas over the base of the prepared cake pan.
Step 3:
Use an electric mixer to beat the butter and brown sugar in a bowl until pale and creamy. Add the eggs, one at a time, beating well after each addition. Gradually add the mashed bananas, self-raising flour, and sour cream, stirring well after each addition. Pour the batter over the caramelized bananas in the pan and smooth the surface. Bake for about 1 hour, or until a skewer inserted into the center comes out clean. Set aside in the pan for 10 minutes, then turn out onto a wire rack to cool completely.
Step 4:
Place the caster sugar in a saucepan over medium heat. Cook, stirring, for 6-8 minutes, or until the sugar melts and turns golden brown. Remove from heat and carefully add the cream and 1/4 cup (60 ml) of water. Return the pan to low heat and cook, stirring, for 5 minutes or until smooth.
Step 5:
Transfer the cooled cake to a serving plate. Pour the caramel sauce over the cake. Cut the cake into wedges and serve.
