- 2 large cups of flour
- 1 cup of sugar
- 1 cup of boiled carrots (boiled in water and sugar)
- 3 or 4 eggs
- Vanilla, baking powder, and a small amount of apple cider vinegar
- A pinch of salt
- 1 teaspoon of orange zest
- 1 ½ cups of orange juice
- ½ teaspoon of baking soda
- 2 teaspoons of cinnamon powder
- ¾ cup of vegetable oil
- A small pinch of baking soda (bicarbonate of soda)
How to Prepare Carrot and Orange Cake
Start by placing the eggs in a blender and blend for about 2 minutes.
Add the sugar to the eggs and continue blending intermittently for 7 minutes, making sure the sugar dissolves well into the eggs.
Add the vanilla and baking powder to the mixture and continue blending to combine all the ingredients.
Pour in the vegetable oil and vinegar, and keep stirring the mixture for about 3 minutes.
Then, add the orange juice, orange zest, salt, and baking soda to the blender and mix everything well.
Add the boiled carrots to the mixture and blend for another 5 minutes until fully incorporated.
Pour the mixture into a large bowl and gradually add the flour while stirring slowly to prevent any lumps from forming in the batter. Continue adding flour until the quantity is fully used.
Grease a baking pan with a small amount of butter or ghee, then pour the cake mixture into the pan.
Preheat the oven to 180°C (350°F) and bake the cake until fully cooked.
Once the cake is baked, remove it from the oven and let it cool down.
