  • 2 cups of cashews
  • 1 teaspoon whole coriander
  • 2 cardamom pods
  • 1 tablespoon sunflower oil
  • 1 medium onion, finely chopped
  • 1 garlic clove, minced
  • 1/4 teaspoon grated ginger
  • 1 green chili, finely chopped
  • 1 cinnamon stick
  • 1/2 teaspoon turmeric
  • 1/4 cup cooking cream
  • 1.5 cups broth

For Garnishing:

  • Fresh coriander leaves

Preparation Method:

  1. Soaking the Cashews:

    • Soak the cashews in a large bowl of water for several hours, preferably overnight. After soaking, drain the cashews and set aside until needed.
  2. Preparing the Spice Mixture:

    • In a mortar, combine the coriander and cardamom seeds (removed from pods) and grind them using the pestle until well crushed.
  3. Cooking the Mixture:

    • In a wide, thick-bottomed pot, heat the sunflower oil over medium heat. Add the chopped onion and minced garlic, stirring for about two minutes until fragrant.
    • Add the grated ginger, chopped chili, and the ground spice mixture. Stir for a few minutes.
  4. Adding Liquids:

    • Pour in the cooking cream and broth, stirring until the broth begins to boil.
    • Add the soaked cashews, cover the pot, and let it simmer on low heat for 20 minutes until the cashews are well cooked.
  5. Serving:

    • Transfer the cashew dish to a serving platter and garnish with fresh coriander leaves. Serve hot.
