Ingredients for Cauliflower with Tomatoes:

Cauliflower with Tomatoes

  • 2 tablespoons sunflower oil
  • 1 kg lamb with bones
  • 1 medium onion, finely chopped
  • 4 large tomatoes, peeled and finely chopped
  • 1 tablespoon salt
  • 1 teaspoon ground black pepper
  • ½ teaspoon mixed spices
  • ½ teaspoon dried coriander
  • ½ teaspoon ground cumin
  • 4 cups lukewarm water
  • 1 head of cauliflower, cut into small florets
  • 2 tablespoons fresh lemon juice
  • 4 cloves garlic, finely minced
  • ¼ cup fresh coriander, finely chopped

For Frying:

  • A generous amount of sunflower oil

Preparation Method:

  1. Cooking the Meat:

    • In a large pot, heat the sunflower oil over medium heat. Add the lamb pieces and cook, turning frequently, until browned on all sides.
    • Add the chopped onion and stir until it softens and turns golden. Add the chopped tomatoes, salt, black pepper, mixed spices, dried coriander, and cumin, stirring well to combine all the ingredients.
  2. Simmering:

    • Pour in the water and bring the mixture to a boil. Once boiling, reduce the heat, cover the pot, and let it simmer on low heat for about 2 hours until the meat is fully cooked.
  3. Frying the Cauliflower:

    • In a wide, heavy-bottomed frying pan, heat a generous amount of sunflower oil over medium heat. Fry the cauliflower florets in batches, stirring frequently, until they turn light golden. Remove them from the oil and place them on paper towels to drain the excess oil.
  4. Combining:

    • Add the fried cauliflower and lemon juice to the meat mixture. Let everything simmer together on low heat for about 15 minutes, allowing the cauliflower to absorb the flavors.
  5. Garlic and Coriander Mixture:

    • In a small frying pan, heat 2 tablespoons of sunflower oil over medium heat. Add the minced garlic and cook, stirring constantly, until fragrant and golden. Add the fresh coriander and stir for a few minutes until it wilts.
  6. Final Touch:

    • Add the garlic and coriander mixture to the pot with the meat and cauliflower, stirring well to combine. Serve hot.

Enjoy your flavorful Cauliflower with Tomatoes, a warm and comforting dish perfect for any occasion!
