  • 2 ½ cups all-purpose flour
  • 1 tablespoon instant dry yeast
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 1 tablespoon granulated sugar
  • 2 tablespoons milk powder
  • ¼ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ cup sunflower oil
  • 1 cup warm water

Filling Ingredients:

  • 1 kg ground beef
  • 1 large onion, finely chopped
  • 2 large tomatoes, peeled and finely chopped
  • 2 cloves garlic, minced
  • 12 green chili peppers, finely chopped
  • 1 teaspoon grated ginger
  • ¼ cup sweet pomegranate molasses
  • ½ cup tahini
  • ¼ cup yogurt
  • 1 cup grated mozzarella cheese
  • 1 teaspoon salt
  • ½ teaspoon ground black pepper
  • 1 teaspoon meat spices
  • ¼ teaspoon nutmeg
  • ¼ cup pine nuts

Preparation of Cheese-Stuffed Meat Patties:

  1. Make the Dough: In a mixing bowl, combine 2 ½ cups of flour, yeast, salt, baking powder, sugar, milk powder, garlic powder, onion powder, oil, and warm water. Mix on low speed until a soft dough forms (if the dough is too soft, add ¼ cup more flour to firm it up).

  2. Let the Dough Rise: Remove the dough from the bowl, shape it into a ball, and place it in a greased bowl. Cover with plastic wrap and let it rise in a warm place for about 60 minutes until it doubles in size.

  3. Prepare the Filling: In a large mixing bowl, combine the ground beef, onion, tomatoes, garlic, black pepper, ginger, pomegranate molasses, tahini, yogurt, mozzarella cheese, salt, green chili peppers, meat spices, nutmeg, and pine nuts. Mix thoroughly with a wooden spoon until well combined.

  4. Shape the Patties: Form small balls from the dough, about the size of a walnut. Arrange them in a shallow baking dish and flatten each ball with your fingers to create medium-sized patties. Cover the dish with plastic wrap and let it rise in a warm place for 15 minutes.

  5. Fill the Patties: Use a small spoon to distribute the filling evenly over each patty (you can adjust the amount according to your preference).

  6. Bake: Preheat the oven to 180°C (350°F). Place the baking dish on the middle rack and bake for about 10 minutes until they turn a light golden color. Remove from the oven and serve immediately while hot.
