Cheese Tajine – Ingredients and Preparation Method

Ingredients for Cheese Tajine:
- Chicken pieces, cut into cubes.
- 1 onion, peeled and finely chopped.
- 3 cloves of garlic, peeled and finely minced.
- 1 teaspoon of salt.
- ½ teaspoon of black pepper.
- 2½ cups of water.
- 1½ tablespoons of ghee.
For the mixture:
- ½ kilogram of potatoes.
- 5 medium-sized eggs.
- 300 grams of soft cheese.
- A bunch of finely chopped parsley.
- A pinch of salt (to taste).
Preparation Method for Cheese Tajine:
Cook the chicken:
- In a large pot, heat a little ghee and sauté the onion and garlic until golden. Add the salt, black pepper, and spices, stirring well until the onion and garlic become golden brown.
- Add the cubed chicken to the pot, reduce the heat, and stir until all the ingredients are well combined.
- Pour enough water into the pot to cover the chicken pieces. Cover the pot and let the chicken cook until tender.
Prepare the potatoes:
- Peel the potatoes and cut them into small cubes. Drain them well.
- Fry the potato cubes in oil or ghee, as preferred. In a separate pot, add the fried potatoes and cheese, stirring together until the cheese melts.
Combine the ingredients:
- Once the chicken is fully cooked, remove the pieces from the first pot, cut them into smaller pieces, and add them to the potato and cheese mixture.
- Add the chopped parsley, the remaining broth, and the eggs (beaten beforehand), then mix everything together.
Bake the tajine:
- Grease the bottom of a baking dish with oil or ghee, then pour in the mixture.
- Place the dish in the oven at 180°C (350°F).
- When the surface turns golden and the broth is absorbed, remove the dish from the oven and cut the tajine into equal-sized squares.
Serve hot, garnished with some green olives.
