Cherry Clafoutis – Recipe and Preparation Method

Cherry Clafoutis is one of the most famous traditional French tarts, originating from the city of Limousin and becoming one of the most beloved Parisian desserts throughout Europe and the world during the 19th century. It is typically served with coffee and can be made with various fruits, but the authentic traditional taste is best achieved with fresh cherries.

Cherry Sauce for Garnishing:

Ingredients:
  • 1 kg cherries
  • 2 cups orange juice
  • Sugar to taste
  • 1 teaspoon ground cinnamon

Preparation Steps:

  1. Clean the cherries thoroughly without cutting them and place them in a cooking pot.
  2. Set the heat to medium, add the orange juice, sugar, and ground cinnamon, and stir the mixture occasionally. Then, lower the heat.
  3. Once the sauce thickens, remove it from the heat and let it cool.
  4. Pour the cherry sauce into airtight containers and refrigerate.

Preparing Cherry Clafoutis:

Ingredients:

  • Fresh cherries
  • 70g pastry flour
  • 100g powdered sugar
  • ⅔ cup whole milk (about 160 ml)
  • 1 egg
  • Icing sugar
  • A pinch of salt (optional)

Preparation Method:

  1. After washing the cherries, combine the powdered sugar and egg in a deep bowl, whisking well with an electric hand whisk until the mixture is smooth and fully blended.

  2. Add the pastry flour to the mixture, followed by the milk, sugar, and a pinch of salt. Stir gently to ensure the batter is smooth and free of lumps.

  3. Grease a baking dish with melted butter, pour the batter evenly into the dish, and then add the fresh cherries on top.

  4. Preheat the oven to 180°C (356°F). Bake the Clafoutis for about 45 minutes until fully set. Once done, remove from the oven and let it cool.

  5. Garnish the Clafoutis with the prepared cherry sauce and a sprinkle of icing sugar. For a delightful variation, you can also make the Clafoutis in small molds and decorate it with strawberries and raspberries.
