Chicken Ablama with White Rice – A Delicious Chicken Dish with White Rice
The Chicken Ablama recipe with white rice is a twist on the traditional Ablama dish, which is usually made with stuffed zucchini. This version is equally flavorful, hearty, and perfect for cold winter days. Let's dive in and prepare it together.
Ingredients:
- 1 kg of cleaned chicken thighs
- 6 or 7 small onions, peeled
- 1 ½ cups of soaked white rice
- 4 tablespoons of vermicelli
- 2 tablespoons of pine nuts and peeled almonds
- Lemon juice to taste
- 2 tablespoons of ghee (or as needed)
- 5 tablespoons of all-purpose flour
- 1 ½ liters (or more) of chicken broth or water with a chicken stock cube
- Oil as needed
- Salt to taste
- ½ teaspoon of white pepper
- ½ teaspoon of garlic powder
- ½ teaspoon of onion powder
- 1 cinnamon stick
- A few bay leaves
- A small piece of lemon peel
How to Prepare Chicken Ablama with White Rice:
In a pot over medium heat, add some oil and fry the pine nuts and almonds until golden brown, then set them aside.
In the same pot, add a little ghee and fry the small onions until they turn golden. Remove the onions and set them aside.
In a bowl, mix flour with garlic powder, onion powder, and salt. Cut the chicken thighs and coat them in the flour mixture.
Using the same pot, add more ghee if needed and fry the chicken pieces until they are lightly browned on all sides. Remove the chicken and set it aside.
In the same pot, add the remaining flour and ghee, stirring well. Gradually add chicken broth while whisking to prevent lumps.
Return the chicken and onions to the pot, add the bay leaves, cinnamon stick, and lemon peel. Cover the pot and let it simmer until the chicken is fully cooked.
Once the chicken is cooked, add lemon juice and let the flavors blend for a few more minutes before turning off the heat.

In a pot, heat some oil and fry the vermicelli until golden brown.
Drain the soaked rice and add it to the pot, stirring it with the vermicelli and oil.
Add salt, water, and lemon peel. Once the water starts boiling, cover the pot and let the rice cook until tender.
