It can be cooked with chicken or meat, paired with beans or molokhia, and is the base of dishes like Maqluba. Additionally, it’s often used to stuff vegetables such as zucchini, eggplant, or squash. Rice is an essential component in many meals, offering numerous health benefits.

  • 4 cloves of garlic, mashed.
  • ½ teaspoon of black pepper and saffron.
  • 1 teaspoon of:
    • Ground cumin.
    • Crushed cardamom.
    • Ground coriander.
  • 2 teaspoons of salt.
  • ½ cup of corn oil or butter.
  • 2 cups of pasta.
  • 4 tablespoons of tomato paste.
  • 4 teaspoons of mixed spices.
  • 2 large onions, sliced.
  • 1 kilogram of chicken, quartered.
  • 3 cups of long-grain rice.

Preparation Method for Chicken and Pasta Rice:

  1. Wash the rice thoroughly several times until the water runs clear. Then soak it in warm water for half an hour.
  2. Boil the pasta according to the instructions on the package. Once cooked, set it aside.
  3. In a medium-sized pot, heat the oil and fry the onions until they turn golden.
  4. Remove about half of the onions to use as garnish later.
  5. Add the chicken to the pot and sauté until it turns golden on all sides. Then add the pepper, coriander, cardamom, salt, cumin, and half of the available spices.
  6. Pour in some water over the chicken, cover, and cook for about 20 minutes. Afterward, remove the chicken and strain the broth.
  7. In a medium-sized pot, add about 4 cups of the strained broth and bring it to a boil. Use this to cook the rice.
  8. Cover the pot and cook the rice over low heat for 20-25 minutes.
  9. 10 minutes before the cooking time is complete, add the boiled pasta on top of the rice.
  10. Preheat the oven to 200°C. In an oven-safe dish, combine 1 cup of broth, tomato paste, the remaining spices, saffron, and garlic.
  11. Add the chicken to the dish and place it in the oven for 15-20 minutes.
  12. Finally, serve the rice in a large dish, placing the chicken on top and garnishing with the fried onions.
