  • 2 cups Basmati rice
  • 1 kg chicken, cut into pieces
  • 2 teaspoons salt
  • 2 teaspoons mixed spices
  • 1/2 teaspoon ground cardamom
  • 1 teaspoon dried coriander
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon ground black pepper
  • 4 tablespoons sunflower oil
  • 2 medium onions, finely chopped
  • 1 teaspoon finely grated fresh ginger
  • 1 cinnamon stick
  • 4 cloves garlic, minced
  • 2 medium tomatoes, peeled and finely chopped
  • 1 large carrot, sliced thinly
  • 1 can tomato paste

How to Prepare Chicken and Tomato Sauce Rice:

  1. Prep the Rice:

    • In a medium bowl, rinse the rice several times and soak it in salted water for 15 minutes before cooking.
  2. Season the Chicken:

    • In a large bowl, place the chicken and sprinkle half the salt, mixed spices, ground cardamom, dried coriander, ground cumin, and black pepper. Massage the spices into the chicken for about 3 minutes to infuse flavor.
  3. Sauté the Chicken:

    • Heat sunflower oil in a deep pot over medium heat. Once hot, add the chicken and sauté until it turns golden brown. Remove the chicken from the pot and set it aside.
  4. Sauté the Vegetables:

    • In the same pot, add the chopped onions, minced garlic, and grated ginger. Stir for a few minutes until the garlic's aroma fills the kitchen and the onions turn golden.
  5. Add Tomatoes and Carrots:

    • Add the chopped tomatoes, sliced carrot, tomato paste, remaining salt, and 1 cup of water along with the browned chicken. Cover and simmer on medium heat for 30 minutes until the chicken is fully cooked.
  6. Cook the Rice:

    • In a separate large pot, bring 8 cups of water to a boil. Once boiling, add the soaked rice and cook for 8 minutes. Drain the rice and transfer it to the pot with the chicken mixture.
  7. Combine and Steam:

    • Cover the pot and let it simmer on low heat for 15 minutes until the rice absorbs the flavors and is fully cooked.
  8. Serve:

    • Gently stir the rice and chicken with the tomato sauce and transfer to a serving dish. Serve hot.
