- 1 medium onion, finely chopped
- 1 bunch of lemongrass

- 2 tablespoons of vegetable oil
- 1 medium onion, sliced
- 2 medium chicken breasts, cut into cubes
- 1½ cups of broccoli florets
- 1 cup of mushrooms
- 1 teaspoon of dried basil
- 3 crushed garlic cloves
- Zest of half a lemon
- 1¼ cups of coconut milk
- ¼ cup of chicken broth
- 1 can of tomatoes
- Salt to taste
- Black pepper to taste
Preparation of Chicken Curry with Vegetables:
Preparing the Curry Paste:
- Add all the curry paste ingredients to a blender or food processor. Blend them well until smooth and fully combined.
Preparing the Main Dish:
- Heat 2 tablespoons of vegetable oil in a large pot over medium heat. Add the sliced onions and half of the curry paste. Sauté the mixture, stirring occasionally.
