Chicken Madhrooba

  • ½ kg boneless chicken breast
  • 1 cup of rice
  • 1 onion
  • 1 tomato
  • 1 green bell pepper
  • 2 tablespoons chopped dill
  • 2 tablespoons fresh coriander
  • 1 tablespoon ghee
  • 2 tablespoons vegetable oil
  • 1 tablespoon tomato paste
  • ½ tablespoon cumin
  • 1 tablespoon salt
  • ½ tablespoon black pepper

Steps to Prepare Chicken Madhrooba:

  1. Prepare the Chicken: Start by cutting the chicken breast into small, rectangular pieces. Heat a pot with 1 tablespoon of vegetable oil and sauté the chicken until it turns golden brown. Once done, set it aside.

  2. Prepare the Vegetables: In another pot, heat 1 tablespoon of vegetable oil and add finely chopped onions. Once the onions start to soften, add the chopped tomato and bell pepper. Stir the mixture on medium heat for a few minutes, then add 1 tablespoon of tomato paste and mix well.

  3. Combine Chicken and Vegetables: Add the cooked chicken pieces to the vegetable mixture and stir everything together. Then add black pepper, cumin, salt, dill, and coriander. Mix well and allow the chicken to absorb all the flavors.

  4. Add the Rice: Wash and drain the rice, then add it to the pot with the chicken and vegetables. Pour in enough water to cover the mixture generously. Keep the pot on the stove for about an hour, stirring frequently to prevent the mixture from sticking to the bottom of the pot.

  5. Blend the Mixture: After cooking for an hour, use a hand mixer or whisk to lightly mash the mixture until it becomes smooth. Return the pot to the heat and let it thicken to your desired consistency.

  6. Final Touch: Once the Chicken Madhrooba is ready, pour it into a deep serving dish. Melt 1 tablespoon of ghee and drizzle it on top.
