Chicken Roses – Recipe and Preparation
Chicken roses are a delicious appetizer that can be served at gatherings and family events. They are characterized by their wonderful taste and high protein content from the chicken. This dish is easy to prepare and requires only 20 minutes to get ready, serving up to 12 people.
Ingredients for Chicken Roses:
- 2 ½ cups all-purpose flour
- 3 teaspoons instant dry yeast
- 1 teaspoon salt
- 1 teaspoon baking powder

- ½ cup yogurt
- ¼ cup sunflower oil
- 1 cup warm water

- 1 kg minced chicken
- 1 large onion, finely chopped
- 2 large tomatoes, peeled and finely chopped
- 2 cloves garlic, minced
- 12 green bell peppers, finely chopped
- 1 teaspoon grated ginger
- ¼ cup sweet pomegranate molasses
- ½ cup tahini
- ¼ cup yogurt
- 1 cup grated cheddar cheese
- 1 teaspoon salt
- ½ teaspoon ground black pepper
- ½ teaspoon paprika
- ½ teaspoon dried coriander
- ¼ teaspoon nutmeg
- ¼ cup pine nuts
Preparation Method for Chicken Roses:
Prepare Muffin Tins: Start by greasing large muffin tins and set them aside for later use.
Make the Dough: In a mixing bowl, combine 2 ½ cups of flour, yeast, salt, baking powder, powdered sugar, milk powder, and garlic and onion powders. Mix on medium speed until combined.
Combine Wet Ingredients: Add the yogurt, sunflower oil, and warm water. Mix on low speed until you have a smooth dough. If the dough is too sticky, add up to ¼ cup more flour until the desired consistency is reached.
Let the Dough Rise: Shape the dough into a ball and place it in an oiled bowl. Cover with plastic wrap and let it rise in a warm place for about 60 minutes, or until doubled in size.
Prepare the Filling: In a large skillet, heat a little oil over medium heat. Add the minced chicken and cook until browned. Then, add salt, onion, black pepper, paprika, oregano, and dried coriander. Stir for about 3 minutes until the onion is golden.

Fill the Roses: Spoon one tablespoon of the chicken filling into each rose and top with grated mozzarella cheese. Repeat until all filling and dough are used.
Let Them Rise Again: Arrange the muffin tins on a baking sheet and cover with plastic wrap. Let them rest in a warm place for about 15 minutes.
Bake: Preheat the oven to 180°C (350°F) and bake for 15 minutes until golden brown. Remove from the oven and serve hot.
