- 1 kg chicken, cut into quarters
- 1 medium onion, peeled and quartered
- 1 tablespoon salt
- 1 cinnamon stick
- 2 bay leaves
- 4 whole cloves
- 5 whole cardamom pods
- 4 large potatoes, peeled, thickly sliced, and fried

- ½ cup chicken broth
- ½ cup pomegranate molasses
- ½ cup vinegar
Preparation Method:
Boil the Chicken:
- In a large pot, place the chicken pieces and add the onion, salt, cinnamon stick, bay leaves, cloves, and cardamom pods. Pour enough water to cover the chicken. Bring to a boil over high heat. Once boiling, skim off any foam that forms on the surface using a slotted spoon, and continue until no foam remains. Cover the pot and let the chicken simmer on low heat for 30 minutes. Once cooked, remove the chicken from the pot and set the broth aside for later use.
Prepare the Pomegranate Molasses Sauce:
- In a medium saucepan, combine the reserved chicken broth, pomegranate molasses, and vinegar. Bring to a boil over medium heat, then reduce to low and let it simmer for 5 minutes until the sauce thickens.
Assemble the Dish:
- Preheat your oven to 180°C (356°F). In a baking dish, layer half of the fried potato slices to cover the bottom. Place the chicken on top, followed by the remaining potato slices. Pour the pomegranate molasses sauce evenly over the chicken and potatoes.
Bake:
- Place the dish on the middle rack of the preheated oven and bake for 45 minutes until the chicken is well roasted, and the potatoes are fully cooked, absorbing all the flavors.
