Chocolate Cardamom Cake
The addition of ground cardamom and instant espresso to this chocolate cake evokes the tradition of cardamom coffee practiced throughout the Middle East and Southeast Asia. The floral notes of cardamom complement rich ingredients like espresso and chocolate. However, be careful not to overuse cardamom, as it is a potent spice that can easily overpower any dish.
This recipe, for example, requires only 2 teaspoons of cardamom for the entire cake. Topped with dark chocolate ganache and sprinkled with pistachios, it makes a delightful dessert suitable for special occasions.
Ingredients for Chocolate Cardamom Cake:

For the Cake:
- 2 sticks (227 grams) unsalted butter, softened, plus more for greasing
- 2 cups (241 grams) all-purpose flour, plus more for greasing the pan
- 2 teaspoons ground cardamom
- 3/4 cup (64 grams) unsweetened cocoa powder
- 1 packet instant espresso powder
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1 teaspoon English salt (Kosher salt)
- 3/4 cup (148 grams) granulated sugar
- 3/4 cup (160 grams) packed light brown sugar
- 2 large eggs + 2 large egg yolks, room temperature
- 1 teaspoon pure vanilla extract
- 1/2 cup (120 grams) sour cream
- 1 cup (237 ml) yogurt
For the Ganache:
- 226 grams chopped dark chocolate
- 1 cup heavy cream
- Chopped pistachios for garnish
How to Prepare Chocolate Cardamom Cake:
Step 1: Making the Cake
Preheat the oven to 350°F (175°C). Generously grease and flour a baking pan and set it aside.
In a large bowl, whisk together the flour, cardamom, cocoa powder, espresso powder, baking soda, baking powder, and salt. Set the mixture aside.
In a stand mixer, beat the butter, granulated sugar, and brown sugar on medium speed until light and fluffy, about 5 minutes.
Add the eggs and egg yolks one at a time, mixing until fully incorporated.
Add the vanilla extract and mix until combined.
Add half of the flour mixture to the butter mixture and blend until just combined.
Add the sour cream and mix until blended.
Add the remaining flour mixture and yogurt, mixing until the batter is fully combined.
Transfer the batter to the prepared baking pan and bake until a toothpick inserted near the center comes out clean, about 45 to 50 minutes. Transfer to a cooling rack and let cool for 10 minutes.
Step 2: Making the Ganache
Place the chopped dark chocolate in a mixing bowl. Heat the heavy cream in a small saucepan until it just begins to boil. Pour the cream over the chocolate immediately and let it sit for 5 minutes.
Whisk the mixture until creamy and smooth. Pour the ganache over the cooled cake and sprinkle with chopped pistachios.
