Chocolate Coffee Cake – Recipe and Preparation Method
Chocolate Coffee Cake is a delicious dessert that is perfect for early mornings due to its high calories and caffeine content, providing energy throughout the day. It is also an excellent addition to Ramadan evenings, adding a special flavor to the table. This recipe is easy to make and requires minimal time and effort.
Main Ingredients for Chocolate Coffee Cake:
Cake Mixture:
- 2 tablespoons coffee
- 1 cup hot water
- 1 cup yogurt
- ½ cup sunflower oil
- 2 cups granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract (or vanilla powder if unavailable)
- 2 cups all-purpose flour
- 2 teaspoons baking soda
- ½ teaspoon salt
- 1 teaspoon baking powder
- ¾ cup cocoa powder
Coffee Sauce:
- 1 cup melted butter
- 1 teaspoon vanilla extract
- 4 tablespoons powdered milk
- 4½ cups powdered sugar
- ¾ cup cocoa powder
- 2 tablespoons coffee
- ¼ cup hot water
Decoration:
- An adequate amount of melted chocolate
Preparation Method for Chocolate Coffee Cake:
Prepare the Cake Pans:
- Start by preparing two medium-sized round cake pans. Brush them with melted butter using a wide brush, then sprinkle flour over all sides. Tap the pans to remove any excess flour.
Make the Coffee Mixture:
- In a small bowl, mix the coffee and hot water until the coffee is fully dissolved. Set it aside for later use.
Make the Cake Batter:
- In a stand mixer bowl, combine yogurt, sunflower oil, sugar, eggs, vanilla extract, flour, baking soda, salt, baking powder, and cocoa powder. Attach the paddle attachment and mix on medium speed for a few minutes until all ingredients are well combined. Add the coffee mixture and continue mixing for an additional 3 minutes until you get a smooth cake batter.
Bake the Cake:
- Divide the batter evenly between the two prepared pans. Preheat the oven to 180°C (356°F), place the pans on the middle rack, and bake for 30–35 minutes or until the cakes are fully baked.
- Once done, remove the cakes from the oven, let them cool for a few minutes, then invert them onto a cooling rack and let them cool completely.
Prepare the Coffee Sauce:
- In a blender, add the melted butter and vanilla extract and blend for about 3 minutes. Gradually add the powdered sugar and cocoa powder while continuing to blend for 5 minutes.
- In a small cup, mix the hot water and coffee, then gradually add this mixture to the blender along with the powdered milk, blending continuously until you achieve a smooth and creamy sauce.
Assemble the Cake:
- Place the first cake layer on a serving plate and pour half of the coffee sauce over it, spreading it evenly over the top and edges. Place the second cake layer on top and pour the remaining sauce, covering the entire cake.
- Finally, decorate the cake with drizzles of melted chocolate in an attractive pattern and refrigerate for several hours to allow the flavors to meld.
