Chocolate Rolls – Recipe and Preparation Method

Chocolate rolls are a delicious dessert perfect for family gatherings, special occasions, and Ramadan nights. They are known for their delightful taste and high calorie content, providing energy throughout the day.

Ingredients for Chocolate Rolls:

Chocolate Rolls

Dough Ingredients:

  • 2½ cups all-purpose flour
  • 1 tablespoon instant yeast
  • 1 large egg
  • 1 teaspoon salt
  • 3 tablespoons granulated sugar
  • 2 tablespoons melted butter
  • ½ cup milk
  • 1 teaspoon vanilla extract (or vanilla powder if unavailable)

Chocolate Cream Ingredients:

  • 2 cups milk
  • 3 tablespoons granulated sugar
  • 3 tablespoons custard powder
  • 200 grams chocolate

Egg Wash:

  • 1 large egg yolk

Decoration:

  • Melted chocolate

Preparation Method:

  1. Prepare the Dough:

    • In a stand mixer bowl, combine the flour, yeast, salt, melted butter, milk, and vanilla. Attach the dough hook and knead on low speed until a cohesive dough forms.
  2. Let the Dough Rise:

    • Transfer the dough to a greased bowl, cover with plastic wrap, and let it rise in a warm place for about 60 minutes, or until doubled in size.
  3. Make the Chocolate Cream:

    • In a medium saucepan, whisk together the milk, sugar, and custard powder until smooth. Place the saucepan over medium heat, stirring continuously until the mixture thickens.
    • Add the chocolate and stir gently until fully melted and combined. Set aside to cool completely.
  4. Prepare the Egg Wash:

    • In a small bowl, whisk the egg yolk and set aside.
  5. Shape the Rolls:

    • Divide the dough into 12 equal portions. Roll each portion on a floured surface into a thin rope.
    • Wrap each rope around a greased tube mold, ensuring the ends are securely tucked in. Repeat with the remaining dough.
  6. Second Rise:

    • Place the wrapped dough tubes on a baking tray, ensuring enough space between each. Cover with a cloth and let them rest for about 15 minutes to rise again.
  7. Bake the Rolls:

    • Preheat the oven to 180°C (350°F). Brush each roll with the egg wash using a pastry brush.
    • Bake on the middle rack for about 15–20 minutes, or until golden brown. Remove from the oven and let them cool completely.
  8. Fill the Rolls:

    • Once cooled, fill each roll with the chocolate cream using a piping bag fitted with a narrow, long nozzle.
  9. Decorate:

    • Drizzle melted chocolate over the filled rolls for a decorative finish. Chill in the refrigerator for a few hours before serving.
