Cinnamon cake is a delightful dessert loved by both adults and children. It pairs perfectly with a cup of coffee in the morning. This cake is not only delicious but also offers health benefits, as cinnamon is rich in fiber and essential minerals. The recipe is easy to prepare and takes only 40 minutes, serving eight people.

For the Cake Batter:

  • 3½ cups of all-purpose flour
  • 2½ teaspoons of baking powder
  • 1½ cups of granulated sugar
  • ⅓ cup of brown sugar
  • ¾ cup of melted butter
  • 1¼ teaspoons of salt
  • 2 teaspoons of liquid vanilla (or powdered vanilla if unavailable)
  • 3 large eggs
  • 1 cup of sour cream
  • 1 cup of milk

For the Filling:

  • 1 cup of brown sugar
  • 4 teaspoons of ground cinnamon
  • 1 teaspoon of unsweetened cocoa powder

For the Topping:

  • 1¼ cups of all-purpose flour
  • 1 cup of granulated sugar
  • ¾ teaspoon of salt
  • 2 teaspoons of ground cinnamon
  • ¼ cup of melted butter

Steps to Prepare Cinnamon Cake:

  1. Preparing the Cake Pan:
    Line a rectangular cake pan with parchment paper and set it aside for later use.

  2. Making the Cake Batter:
    In a large bowl, sift together the flour, baking powder, and salt. In the bowl of a stand mixer, add the granulated sugar and melted butter. Mix on medium speed for about 3 minutes until the mixture becomes light and fluffy.

  3. Adding the Eggs:
    Gradually add the eggs to the butter and sugar mixture one at a time. Mix each egg on medium speed until fully incorporated before adding the next. Once all the eggs are mixed in, add the sour cream and half of the flour mixture. Mix on medium speed for 2 minutes. Then, add the remaining flour mixture and the milk, and continue mixing for an additional 60 seconds until the batter is smooth.

  4. Preparing the Filling:
    In a separate bowl, mix the brown sugar, cinnamon, and cocoa powder using a fork.

  5. Preparing the Topping:
    In another bowl, combine the flour, sugar, salt, cinnamon, and melted butter. Use a hand whisk to mix until the topping becomes crumbly.

  6. Layering the Cake:
    Pour half of the cake batter into the prepared cake pan. Spread a layer of the cinnamon filling evenly over the batter. Then, pour the remaining cake batter on top and finish by sprinkling the crumbly topping over the entire surface.

  7. Baking the Cake:
    Preheat the oven to 180°C (350°F). Place the cake pan on the middle rack and bake for 40-45 minutes, or until the cake turns golden brown and a toothpick inserted into the center comes out clean. Once baked, remove the pan from the oven and allow the cake to cool completely.

  8. Serving:
    Carefully lift the cake out of the pan using the parchment paper. Transfer it to a cutting board and cut the cake into evenly sized squares using a sharp knife. Arrange the cake pieces on serving plates and serve immediately.
