Coffee Bean Cookies – Recipe and Ingredients

Ingredients:
- 2½ cups flour
- 1 cup ghee (melted)
- ½ cup oil
- ½ cup cornstarch

- 3 tablespoons cocoa powder (sweet or unsweetened, based on preference)
- A small pinch of salt
How to Prepare Coffee Bean Cookies:
Mix the Wet Ingredients: In a bowl, add the melted ghee. Then, add the oil and powdered sugar, stirring well until they are fully combined and smooth. Add the cocoa powder and mix thoroughly.
Add the Coffee and Salt: Add a small pinch of salt and half a teaspoon of instant coffee, mixing them into the wet ingredients.
Add the Cornstarch: Add the cornstarch to the mixture and stir until it dissolves without clumps. Dissolve a teaspoon of nescafé in a quarter cup of water and add it to the mixture.
Knead the Dough: Gradually add the flour to the mixture while kneading with your hands until the dough forms. The dough should be soft and smooth to touch.
Chill the Dough: Place the dough in the refrigerator for about 30 minutes to firm up, making it easier to shape.
Shape the Cookies: Once the dough has rested, cut it into small balls. Shape each ball into an elongated form resembling a coffee bean. Use a knife or another tool to make an indentation down the center of each cookie to mimic a coffee bean shape.
Prepare the Baking Tray: Arrange the shaped cookies on a baking tray without greasing it, as the cookies contain enough ghee and oil.
Chill Before Baking: Place the baking tray with the cookies back in the refrigerator for 10 minutes before baking.
Bake the Cookies: Preheat the oven to 120°C (250°F). Bake the cookies on medium heat, baking only the lower part of the cookies (do not turn on the upper heat). Bake for about 15 minutes.
Cool and Serve: Once baked, remove the cookies from the oven but do not handle them immediately to maintain their shape and texture. Allow them to cool completely before transferring to a serving plate.
