Creamy Shakshuka is a delicious dish perfect for breakfast as a main meal. It’s packed with nutrients from the eggs and vegetables, making it rich in vitamins and proteins that benefit the body. It’s easy to prepare and doesn’t require much time or effort.
Main Ingredients for Preparing Creamy Shakshuka:
- 7 large eggs
- 1 cup of cooking cream
- ½ cup of liquid milk
- 1 teaspoon of oregano
- 1 teaspoon of salt
- ½ cup of broccoli florets, cut into small pieces
- 1 large zucchini, sliced
- ½ large red bell pepper
- 1 cup of mushrooms, sliced
- 2 green chili peppers, sliced
- 1 cup of cherry tomatoes, halved
- 6 slices of smoked turkey
- 6 slices of pastrami
- 1 teaspoon of ground black pepper
- 4 slices of bread
For Garnish:
- 10 sprigs of finely chopped parsley
How to Prepare Creamy Shakshuka:
Prepare the Egg Mixture:
- In a medium-sized deep bowl, whisk the eggs using a hand whisk for about 3 minutes. Gradually add the cooking cream and milk while continuing to whisk until the mixture is smooth.
- Add oregano and salt to the egg mixture and stir for a few seconds until fully combined.
Cook the Vegetables:
- In a large deep pot, fill it one-third with water and bring it to a boil over medium heat.
- Add the broccoli florets to the boiling water and cook for 5 minutes until tender. Remove the broccoli and set it aside.
- In the same pot, add the zucchini slices and cook for 3 minutes, just until tender but not too soft. Remove and set aside.
- Add the halved bell pepper to the boiling water and cook for 5 minutes until softened slightly. Remove and set aside.
Assemble the Shakshuka:
- Grease a baking dish with a little sunflower oil, brushing it with a wide brush to cover all sides.
- Spread the zucchini slices evenly over the bottom of the dish. Pour one-third of the egg mixture over the zucchini.
- Layer half of the mushrooms, red bell pepper halves, chili pepper slices, and broccoli florets on top, then pour another third of the egg mixture over the vegetables.
- Add the remaining mushrooms, halved cherry tomatoes, smoked turkey slices, and pastrami slices. Pour the remaining egg mixture over the top and sprinkle with ground black pepper.
- Place the bread slices on top of the mixture.
Bake the Shakshuka:
- Preheat the oven to 180°C. Place the baking dish on the middle rack of the oven and bake for 30 minutes until the eggs are fully cooked and set.
Serve:
- Remove the dish from the oven and sprinkle the top with finely chopped parsley. Serve hot.
