Ingredients:

Crispy Almond Biscuits

For the Dough:
  • 1 packet of ready-made caramel pudding mix
  • 2 large egg yolks
  • 1 tablespoon vanilla extract (or vanilla powder if unavailable)
  • 1 cup butter
  • 1 cup toasted coconut
  • 2 teaspoons baking powder
  • ¼ cup powdered sugar
  • ¼ teaspoon salt
  • 2 cups all-purpose flour

For the Coating:

  • 1 large egg white
  • 1½ cups crushed almonds

For Decoration:

  • A moderate amount of powdered sugar

Preparation:

  1. Prepare the Dough:

    • In a stand mixer bowl, combine the caramel pudding mix, egg yolks, vanilla, butter, and sugar. Mix on medium speed for a few minutes until the ingredients are well combined. Add the toasted coconut, baking powder, salt, and flour, then continue mixing until you achieve a smooth, cohesive dough.
    • Place the dough in a greased bowl, cover it tightly with plastic wrap, and refrigerate for 15 minutes.
  2. Shape the Biscuits:

    • Remove the dough from the fridge and let it sit for a few minutes at room temperature. Form small balls from the dough, pressing each ball with the palm of your hand to create a thick disc. Repeat until all the dough is used.
  3. Prepare the Baking Tray:

    • Line a shallow baking tray with parchment paper and set it aside.
  4. Coat the Biscuits:

    • Prepare two separate bowls: one with the egg white and the other with the crushed almonds. Dip each biscuit disc first into the egg white, then coat it in the crushed almonds. Arrange the coated biscuits on the prepared baking tray.
  5. Bake:

    • Preheat the oven to 180°C (350°F). Place the tray on the middle rack and bake for 10–12 minutes, watching closely to prevent burning. The biscuits should turn light golden.
