Date and chocolate maamoul is a delicious dessert that can be enjoyed in the morning with a cup of coffee or espresso. It combines the rich flavors of dates and chocolate, making it an irresistible treat. This recipe is easy to prepare and takes about 40 minutes to make, serving 15 people.
Ingredients for Date and Chocolate Maamoul:
For the Dough:
- 500 grams of semolina
- 250 grams of flour
- 150 grams of melted butter
- 150 grams of vegetable ghee
- ¼ cup of sugar
- ½ teaspoon of mahleb spice (optional)
- 1½ tablespoons of orange blossom water
- ½ teaspoon of instant yeast
- ½ tablespoon of rose water
For the Filling:
- 250 grams of pitted dates
- 75 grams of butter
For the Coating:
- 150 grams of Galaxy milk chocolate
- 150 grams of dark chocolate
Steps to Prepare Date and Chocolate Maamoul:
Preparing the Dough:
In a large bowl, mix the flour, semolina, melted butter, vegetable ghee, sugar, and mahleb spice. Add the orange blossom water and mix the ingredients well. Cover the bowl tightly with plastic wrap and leave it to rest for 24 hours, allowing the ingredients to soak and blend together.Making the Dough:
After 24 hours, add the rose water to the mixture and knead the dough using your fingertips. Continue kneading for a few minutes until the dough becomes smooth and well combined. Cover the dough with plastic wrap again and leave it in a warm place for 15 minutes to rise.Preparing the Filling:
In a medium-sized pot, melt the butter over medium heat. Add the pitted dates and cook for a few minutes until they soften. Remove from the heat and let the mixture cool slightly. Once cooled, knead the dates with your hands and shape them into small balls.Shaping the Maamoul:
Take a piece of dough and form it into a medium-sized ball. Make an indentation in the center of the dough ball and place a date ball inside. Close the dough over the filling, then press the dough into a maamoul mold, flattening it slightly with your palm. Tap the mold on the table to release the shaped maamoul. Repeat this process until all the dough and date filling are used.Baking the Maamoul:
Preheat the oven to 180°C (350°F). Arrange the maamoul pieces on a baking tray and bake for 15 minutes, or until they turn a light golden color. Remove the tray from the oven and let the maamoul cool completely.Coating the Maamoul with Chocolate:
While the maamoul cools, melt both the Galaxy milk chocolate and dark chocolate using a double boiler. Stir the melted chocolate until smooth.
