  • 2 large eggs
  • ½ cup of sunflower oil
  • ¾ cup of fine sugar
  • 1 teaspoon of liquid vanilla (or vanilla powder if unavailable)
  • 1 ½ cups of all-purpose flour
  • 2 teaspoons of baking powder
  • ½ teaspoon of salt
  • ¼ teaspoon of ground cardamom
  • ¼ teaspoon of ground cinnamon
For the Caramel Sauce:
  • 1 cup of fine sugar
  • 3 tablespoons of butter
  • ½ cup of liquid cream
  • ¼ teaspoon of salt
For Decoration:
  • 8 light-colored dates
  • 10 peeled almonds
  • A moderate amount of pistachios
  • 5 very small rose buds

Preparation Steps:

  1. Prepare the Cake Pan:

    • Grease a tart pan with butter using a wide brush, making sure to cover all sides. Sprinkle a little flour over the butter to prevent the cake from sticking after baking. Set aside.
  2. Soak the Dates:

    • In a large bowl, combine the chopped dates with baking soda and boiling water. Let the mixture soak for a few minutes until slightly softened. Blend until smooth using an electric mixer.
  3. Mix the Ingredients:

    • Add the eggs and vanilla to the date mixture and beat for 2 minutes. Then, incorporate the oil and mix until well combined. Add the sugar and continue mixing. Finally, add the flour, baking powder, ground cardamom, and ground cinnamon. Mix for about 5 minutes until a smooth batter forms.
  4. Bake the Cake:

    • Pour the cake batter into the prepared pan. Preheat the oven to 180°C (350°F) and place the pan on the middle rack. Bake for 20-25 minutes until fully cooked.
  5. Prepare the Caramel Sauce:

    • In a medium saucepan, heat the sugar over medium heat until completely melted. Remove from heat and carefully add the butter, stirring until fully combined. Return to heat and add the cream, stirring continuously for 60 seconds. Finally, add salt and stir. You will have a smooth caramel sauce.
  6. Assemble the Cake:

    • Remove the cake from the oven and invert it onto a serving plate. Pour the caramel sauce over the cake, spreading it evenly with a wide spatula.
  7. Decorate:

    • Arrange the light-colored dates on top of the cake, and sprinkle with peeled almonds, pistachios, and rose buds for an elegant finish.
