This incredibly delicious and super moist deep dark chocolate cake is a personal favorite of mine. It’s a rich, decadent dessert that chocolate lovers will adore. However, the cake tends to stick to the pan, so be sure to thoroughly coat the pan with non-stick cooking spray or line it with parchment or foil.

This recipe makes a 13 x 9 x 2-inch (33 x 23 x 5 cm) rectangular cake or two 9 x 2-inch (23 x 5 cm) round layers.

  • Non-stick cooking spray
  • 2⅓ cups (16.3 ounces / 463 grams) granulated sugar
  • 3/4 teaspoon (4.5 grams) salt
  • 3/4 cup (2.4 ounces / 69 grams) Dutch-processed cocoa powder
  • 1 teaspoon (5 grams) baking soda
  • 1 cup (237 ml) water
  • 3/4 cup (177 ml) canola oil
  • 2 teaspoons (10 ml) pure vanilla extract
  • 1¾ cups (7.7 ounces / 218 grams) all-purpose flour, spooned and leveled
  • 4 large egg yolks (2.6 ounces / 74 grams)
  • 2 large eggs (3.5 ounces / 99 grams)
  • 1/4 cup (59 ml) plain yogurt

How to Prepare Deep Dark Chocolate Cake:

Step 1:
Position a rack in the lower third of the oven, place a baking sheet on it, and preheat the oven to 350°F (177°C).

Step 2:
Spray a 13 x 9 x 2-inch (33 x 23 x 5 cm) rectangular pan or two 9 x 2-inch (23 x 5 cm) round pans with non-stick cooking spray. Line the bottom of the round pans with parchment paper and spray on top of it. For the rectangular pan, line the long sides with a piece of foil or parchment paper sprayed with non-stick cooking spray.

Step 3:
In a heavy saucepan, combine the sugar, salt, cocoa powder, and baking soda. In a separate pot, bring 1 cup (237 ml) of water to a boil. Stirring constantly, pour the boiling water into the cocoa mixture a little at a time. The mixture will initially bubble and then turn dark and thick. Stir the cocoa mixture lightly, then bring it to a boil. Turn off the heat and let it sit in the hot pot for at least 10 minutes.

Step 4:
Pour the hot cocoa mixture into a mixing bowl. Add the oil and vanilla, beating on low speed for 10 seconds. On low speed, mix in the flour, then add the egg yolks, whole eggs, and yogurt, beating as little as necessary. Continue until the mixture is smooth and fluffy. Pour the batter into the prepared pan(s). Place in the oven on the rack and bake until the cake is springy, about 25 to 35 minutes. Let it cool in the pan for 10 minutes on a rack. Run a thin knife around the edges and gently loosen the cake from the pan. Invert the cake onto a serving plate and cool completely before frosting with your favorite cream topping.
