Eggplant with kofta is a delicious main dish that can be served for lunch. This meal is known for its rich flavor and numerous benefits due to the protein-rich meat and vitamin-packed vegetables, making it a nutritionally complete meal.   • 500 grams of kofta
  • 6 large eggplants
  • 3 medium tomatoes, peeled and sliced thinly
  • 2 medium sweet green peppers, sliced thinly

For the Sauce:

  • 3 medium tomatoes, peeled and finely chopped
  • 2 tablespoons pomegranate molasses
  • 2 tablespoons tomato paste
  • 1.5 teaspoons salt
  • 1/4 teaspoon ground black pepper
  • 1 teaspoon mixed spices
  • 1 teaspoon dried mint
  • 4 cloves garlic, minced
  • 1/2 cup warm water

For Frying:

  • Generous amount of sunflower oil

How to Prepare Eggplant with Kofta:

  1. Form the Kofta:

    • Shape the kofta into medium-sized patties that match the size of the tomato slices. Set aside until ready to use.
  2. Prepare the Eggplant:

    • Wash the eggplants thoroughly, peel them, and slice them into round slices. Place the slices on a piece of parchment paper, sprinkle with salt, and rub them for about a minute. Let them sit for about 5 minutes until they release some moisture. Use another piece of parchment to pat them dry.
  3. Fry the Eggplant:

    • In a wide, thick-bottomed pan, heat a generous amount of sunflower oil over medium heat. Once the oil is hot, add the eggplant slices and fry until they turn golden brown. Remove the eggplant and place it on paper towels to absorb excess oil.
  4. Prepare the Sauce:

    • In a medium pot, combine the chopped tomatoes, pomegranate molasses, tomato paste, salt, ground black pepper, mixed spices, dried mint, minced garlic, and warm water. Cook over medium heat, stirring with a wooden spoon for about 10 minutes. Let it simmer for an additional 2 minutes and then remove from heat.
  5. Assemble the Dish:

    • In an oven-safe dish, layer one slice of kofta, followed by a slice of eggplant, a slice of tomato, and a slice of green pepper. Repeat the layering process until all ingredients are used. Pour the sauce over the layered ingredients.
  6. Bake:

    • Cover the dish with aluminum foil and preheat the oven to 180°C (350°F). Place the dish on the middle rack and bake for 30 minutes until cooked through.
  7. Finish Baking:

    • Remove the dish from the oven, take off the aluminum foil, and return it to the oven for another 10 minutes until the top is golden brown.
