  • 500 grams of raqaq bread or flatbread (such as saj bread).
  • 250 grams of finely minced meat.
  • 1 large onion, finely chopped.
  • 1 green bell pepper, sliced.
  • 3 cups of meat broth.
  • ½ cup of ghee.
  • 1 teaspoon of ground cinnamon.
  • ½ teaspoon of ground ginger.
  • Salt to taste.
  • ¼ teaspoon of black pepper.

How to Prepare Egyptian Raqaq with Minced Meat:

  1. Prepare the Meat Filling:

    • In a pot over medium heat, melt 1 tablespoon of ghee. Add the finely chopped onion and sauté until soft.
    • Add the minced meat and sliced green bell pepper, stirring until the meat begins to change color.
    • Season with black pepper, cinnamon, salt, and ground ginger. Stir until all ingredients are well combined.
  2. Prepare the Raqaq Layers:

    • In another pot over medium heat, melt the remaining ghee.
    • Dip one piece of raqaq bread into the meat broth, ensuring it absorbs the liquid, then place it in a greased baking tray. Lightly brush the top with some melted ghee.
    • Repeat this process with half of the raqaq bread, layering each piece in the tray and brushing with ghee.
  3. Add the Meat Filling:

    • Spread the minced meat mixture evenly over the top of the raqaq layers.
  4. Finish the Raqaq Layers:

    • Continue dipping the remaining raqaq bread into the broth, layering each piece on top of the meat filling, and brushing with ghee.
    • Once all the bread is layered, cut the raqaq into squares or rectangles.
  5. Bake the Raqaq:

    • Preheat the oven to 180°C (350°F).
    • Place the baking tray in the oven and bake until the top of the raqaq becomes golden and crispy.
  6. Serve:

    • Remove the tray from the oven and transfer the raqaq to a serving dish.
