Eid Date Maamoul – Recipe and Preparation Method
Eid Date Maamoul is a delightful Middle Eastern pastry often served during festive occasions like Eid and other gatherings. Known for its sweet, rich taste and aromatic allure, it pairs wonderfully with a hot cup of coffee, adding a special flavor to your experience. This recipe is quick and easy to prepare, requiring only 45 minutes of preparation and 5 minutes of baking time.
Main Ingredients for Preparing Eid Date Maamoul:
For the Dough:
- 3½ cups whole wheat flour
- 1 cup cold ghee (or cold animal butter if ghee is unavailable)
- ¾ cup cold water
- ¾ cup caster sugar
- 1 teaspoon instant yeast
For the Filling:
- 500 grams finely mashed dates
- 1 cup finely ground pistachios
- A pinch of ground cinnamon
- A pinch of ground cardamom
Preparation Method for Eid Date Maamoul:
Prepare the Dough:
- In a large bowl, combine the flour and cold ghee. Mix them thoroughly using your hands until the ghee is completely incorporated.
- Add a quarter of the caster sugar and continue mixing until you form a cohesive dough. It’s important to keep the dough cold; if the ghee starts to warm, chill the dough in the refrigerator for 15 minutes.
- Chill the dough in the refrigerator for another 10 minutes to rest.
Activate the Yeast:
- In a large cup, mix the remaining caster sugar with water and yeast. Stir until the sugar is fully dissolved.
- Remove the dough from the refrigerator, knead it briefly, and then slowly incorporate the yeast mixture without over-kneading. Return the dough to the refrigerator to rest for 30 minutes until it rises.
Prepare the Filling:
- In a separate bowl, combine the mashed dates, cinnamon, and cardamom. Mix with your fingertips to blend the ingredients, ensuring your hands are greased with oil to prevent the dates from sticking.
- Shape the date mixture into a thin cylindrical log, then cut it into small pieces and form each piece into a small ball.
Shape the Maamoul:
- Divide the dough into portions and roll each into a thin cylindrical shape. Cut each into pieces slightly larger than the date filling.
- Flatten each dough piece in the palm of your hand, place a date ball in the center, and fold it into a ball. Press the filled dough into a maamoul mold, then coat the shaped maamoul with ground pistachios. Repeat the process with the remaining dough and filling.
Bake the Maamoul:
- Preheat the oven to 220°C (428°F) and lightly dust a large baking tray with flour. Arrange the maamoul on the tray.
- Place the tray on the middle rack and bake for 5 to 7 minutes until the maamoul turn a light golden color.
Serve:
- Once baked, remove the maamoul from the oven and let them cool completely on a flat surface. Arrange them on a serving plate and enjoy.
