Fattah with Sumac – Recipe and Preparation Method
Fattah with sumac is a delightful dish that can be served as an appetizer or as a main course during dinner. It stands out with its delicious flavor and the abundance of vegetables that provide various health benefits. This dish is easy to prepare and does not require much time or effort.
Main Ingredients for Fattah with Sumac:
- 2 loaves of bread, cut into equal-sized squares
- 2 large carrots, diced
- 2 large eggplants, diced
- 2 large potatoes, diced
- 2 green chili peppers, sliced
- 1 large onion, thinly sliced
- 1 can of chickpeas
- 1 can of corn
- 1 large head of lettuce, coarsely chopped
For the Sauce:
- ½ cup of freshly squeezed lemon juice
- ¼ cup of sumac
- 3 cups of yogurt
- ½ cup of tahini
- 3 cloves of garlic, minced
- 1 teaspoon of salt
For Garnishing:
- Chopped parsley
- Pomegranate seeds
Preparation Steps:
Fry the Bread:
- In a large, deep skillet, heat a generous amount of sunflower oil over medium heat. Once the oil is hot, fry the bread squares until they turn a light golden color. Remove and set aside.
Fry the Vegetables:
- In the same skillet, fry the diced carrots, eggplant, potatoes, onion slices, and green chili until they are cooked through. Remove them from the skillet and place on paper towels to drain excess oil.
Prepare the Sauce:
- In a large bowl, combine the freshly squeezed lemon juice, sumac, yogurt, minced garlic, tahini, and salt. Mix well using a large spoon until all ingredients are thoroughly combined.
Assemble the Fattah:
- In a large serving dish, place the chopped lettuce at the bottom. Add half of the fried bread on top, followed by a drizzle of the sauce you prepared. Then layer the fried vegetables (eggplant, potatoes, onion, carrots, and chili), chickpeas, and corn evenly over the bread.
Finish the Dish:
- Drizzle the remaining sauce over the top, followed by the remaining fried bread. Finally, garnish with chopped parsley and pomegranate seeds.
