  • 1 kg of meat pieces
  • 1 large onion, quartered
  • 3 bay leaves
  • 6 whole cardamom pods
  • 1 stick of cinnamon
  • 2 teaspoons of salt
  • 1 kg of chopped fresh fava beans
  • 2 large bunches of chopped Swiss chard
  • 2 tablespoons of ghee
  • 3 cups of meat broth
  • 4 cloves of finely minced garlic
  • 1/2 cup of finely chopped fresh cilantro

How to Prepare Fava Beans with Meat and Swiss Chard:

  1. Preparation of the Meat:

    • In a large, deep pot, add a generous amount of warm water and the meat pieces. Place it over medium heat and let it boil. When the water starts boiling, skim off the foam that rises to the surface using a large spoon. Repeat this process until the foam gradually disappears.
  2. Add Ingredients:

    • Add the quartered onion, bay leaves, cardamom pods, cinnamon stick, and salt. Cover the pot and let it simmer on medium heat for about two hours until the meat is fully cooked. After that, remove the meat from the pot and place it on a separate plate, keeping the broth.
  3. Cooking the Vegetables:

    • In a medium pot, add the ghee and heat it over medium heat until it melts. Add the chopped fava beans and stir with a wooden spoon for about 5 minutes until they are lightly sautéed. Then add the Swiss chard and sauté for a few more minutes until it wilts and reduces in size. Next, add the cooked meat and the reserved broth.
