  • 1 teaspoon of dried coriander
  • ¼ teaspoon of black pepper
  • 6 slices of pastrami
  • 4 large eggs
  • 1 tablespoon of finely chopped parsley

Preparation Method for Fava Beans with Pastrami and Eggs:

  1. Prepare the Fava Beans:

    • In a wide, deep dish, place the canned fava beans and mash them slightly with a fork. Then, add the chopped onion, minced garlic, chopped green chili peppers, chopped tomato, salt, cumin, dried coriander, and black pepper. Mix everything well using a large plastic spoon until all ingredients are combined.
  2. Add the Pastrami:

    • Slice the pastrami into thin strips using a sharp knife and add all the slices to the fava bean mixture. Mix them together.
  3. Prepare for Baking:

    • Transfer the fava bean mixture to a suitable oven-safe dish. Make 4 small wells in the mixture using a tablespoon to hold the eggs. Crack each egg into a small dish first, then gently pour it into the well to avoid breaking the yolk.
  4. Bake:

    • Preheat the oven to 180°C (350°F). Place the dish in the middle rack of the oven and bake for about 10 minutes until the eggs are fully cooked.
  5. Serve:

    • Remove the dish from the oven and garnish with finely chopped parsley. Serve hot, and consider adding lemon slices and a drizzle of olive oil, along with Arabic bread on the side.
