  • 3 large pieces of fish fillet

For the Filling:

  • ½ cup breadcrumbs
  • 1 large egg white
  • 1 medium onion, finely chopped

  • 1 green chili, chopped
  • ½ cup fresh coriander, finely chopped
  • ½ cup fresh dill, finely chopped
  • 1 teaspoon salt
  • ¼ teaspoon ground black pepper
  • 1 tablespoon olive oil
  • 1 teaspoon finely grated lemon zest

For Frying:

  • 4 tablespoons butter
  • 2 tablespoons olive oil

For the Sauce:

  • ½ cup butter
  • ½ cup freshly squeezed lemon juice

Preparation Method:

  1. Prepare the Filling:

    • In a food processor, add breadcrumbs, egg white, onion, grated ginger, garlic, green chili, coriander, dill, salt, black pepper, olive oil, and lemon zest. Blend on medium speed until all the ingredients are well combined into a thick, uniform mixture. Transfer to a bowl and set aside.
  2. Season and Stuff the Fish Fillets:

    • Season the fish fillets with a little salt and black pepper, rubbing them gently with your fingers.
    • Lay each fillet flat on a clean surface, place a portion of the filling inside, and roll up the fillet. Secure each roll with a wooden skewer to prevent it from unraveling during frying.
  3. Fry the Fish Rolls:

    • Heat half the butter and olive oil in a wide, thick-bottomed skillet over medium heat until the butter is melted and the oil is hot.
    • Dredge each fish roll in flour, coating well, and place it in the hot skillet. Fry, turning occasionally, until the rolls are golden brown and fully cooked.
  4. Prepare the Lemon Sauce:

    • Once the fish rolls are cooked, push them to the side of the skillet. Add the remaining butter and olive oil to the skillet along with the freshly squeezed lemon juice. Stir with a wooden spoon until the sauce becomes smooth and creamy.
