  • 1 teaspoon of salt

For the Soup:

  • 1 tablespoon of sunflower oil
  • 2 cloves of garlic, minced
  • 1 stalk of celery, finely chopped
  • 1 tablespoon of flour
  • 2 large tomatoes, peeled and finely chopped
  • 1 large carrot, grated
  • 1 medium potato, cut into small cubes
  • 1 tablespoon of tomato paste
  • 2 tablespoons of freshly squeezed lemon juice
  • 2 tablespoons of fresh cilantro, finely chopped

How to Prepare Fish Soup with Vegetables:

  1. Prepare the Fish:

    • Cut the fish fillets in half using a sharp knife on a wooden cutting board and set them aside for later use.
  2. Boil the Fish:

    • In a large deep pot, bring a generous amount of water to a boil.
    • Once boiling, add the onion, bay leaves, mastic, black peppercorns, and salt.
    • Add the fish pieces and simmer over medium heat for 10 minutes until the fish is fully cooked.
    • Remove the fish from the broth using a slotted spoon and set it aside.
  3. Prepare the Soup Base:

    • In a thick-bottomed pot, heat the sunflower oil over high heat.
    • Add the garlic and celery, stirring constantly for a few minutes until the celery softens.
    • Stir in the flour, mixing it well with the celery and garlic.

    • Add the chopped tomatoes, grated carrots, potato cubes, and tomato paste.
    • Stir the vegetables for a few minutes to combine the flavors, then add the fish broth.
    • Let the soup simmer over medium heat for 15 minutes until the potatoes are cooked through.
  5. Add the Fish:

    • Cut the cooked fish pieces into smaller halves and add them to the soup.
    • Let the soup simmer for another 2 minutes to allow the flavors to meld together.
