  • ½ tablespoon mixed spices (7-spice blend)

Steps to Prepare Freekeh with Chicken:

  1. Soak the Freekeh:
    Start by washing the freekeh thoroughly multiple times. Soak it in hot water for about 30 minutes.

  2. Boil the Chicken:
    In a large pot, place the chicken thighs with 2 cardamom pods, a pinch of 7-spice blend, and some dried bay leaves. Cover the chicken with water and bring to a boil. Let it cook until the chicken is fully cooked through. Once done, remove the chicken from the broth, place them in a baking dish, sprinkle with a bit of salt and 7-spice blend, and roast in the oven until the skin is nicely browned.

  3. Sauté the Onions:
