  • 2 large pieces of lamb leg, cut into large chunks
  • 1 teaspoon each of the following: black pepper, cumin, cardamom, and cloves
  • 1 tablespoon salt
  • 1 large onion
  • 4 bay leaves
  • 2 cinnamon sticks

For the Freekeh Mix:

  • 8 cups freekeh
  • 1 teaspoon each of the following: ground cinnamon, cumin, and cardamom
  • 1 tablespoon salt
  • 1 tablespoon mixed spices
  • 4 tablespoons ghee or oil (as desired)
  • ½ teaspoon black pepper
  • 2 large onions, finely chopped
  • 3 cups peas
  • 1 cup fried almonds (for garnish)

Preparation Method:

Freekeh with Meat


  1. Prepare the Freekeh:

    • Wash the freekeh thoroughly and soak it in warm water for about 15 minutes.
  2. Cook the Meat:

    • In a large pot, add the lamb pieces and cover them with water.
    • Add cumin, cloves, cardamom, black pepper, bay leaves, cinnamon sticks, and a large onion to the pot.
    • Bring the water to a boil and cook the meat until tender (about 1.5 to 2 hours).
    • Once the meat is fully cooked, remove it from the pot and strain the broth, reserving it for later use.
  3. Prepare the Freekeh Mix:

    • In a large pot, heat the ghee or oil over medium heat. Add the chopped onions and sauté until golden brown.
    • Drain the soaked freekeh and add it to the pot with the onions, stirring to dry out the freekeh slightly.
    • Add the spices: ground cinnamon, cumin, cardamom, black pepper, salt, and mixed spices. Stir to combine.
    • Pour in the reserved meat broth and bring the mixture to a simmer. Cover and cook the freekeh over medium heat for about 15 minutes.
  4. Final Assembly:

    • After the freekeh has cooked for 15 minutes, arrange the cooked lamb pieces and peas on top.
    • Cover the pot and continue to cook on low heat for an additional 30 minutes, adding more broth as needed to prevent drying.
  5. Serving:

    • Once the freekeh and meat are fully cooked, transfer the freekeh to a serving dish and place the lamb pieces on top.
    • Garnish with fried almonds and serve hot, with yogurt salad on the side if desired.
