Fruit Tart – Recipe and Preparation Method

Fruit tart is a delightful dessert that can be served at gatherings and special occasions. It is characterized by its delicious flavor and high nutritional value due to the vitamins present in the fruits. Additionally, it is relatively easy to prepare and does not require much time or effort.

For the Dough:

  • ½ cup butter
  • ¼ cup fine sugar
  • 1 large egg
  • 1 large egg yolk
  • 1 teaspoon liquid vanilla (or powdered vanilla if preferred)
  • 1½ cups all-purpose flour
  • ½ teaspoon salt

For the Filling:

  • 4 large egg yolks
  • ⅓ cup cornstarch
  • 1 cup milk
  • 1 vanilla bean
  • ¼ cup fine sugar
  • 1 tablespoon butter

For the Topping:

  • 15 strawberries (adjust quantity as desired)
  • 15 blueberries (adjust quantity as desired)

Preparation Method:

  1. Prepare the Dough:

    • In a mixing bowl, combine butter and sugar. Mix on medium speed for about 5 minutes until the mixture is light yellow.
    • Add the egg, then the egg yolk and vanilla, and mix on low speed for another 2 minutes.
    • Gradually add flour and salt, mixing on medium speed until you achieve a smooth dough.
    • Transfer the dough to a greased bowl, cover it tightly with plastic wrap, and refrigerate for 30 minutes.
  2. Prepare the Filling:

    • In a medium-sized deep bowl, whisk together the egg yolks and cornstarch until smooth.
    • In a saucepan, heat the milk and scrape the seeds from the vanilla bean into the milk. Add the empty pod as well and heat until warm. Remove the pod.
    • Gradually add the hot milk to the egg yolk mixture while whisking continuously.
    • Strain the mixture through a fine sieve back into the saucepan. Cook over medium heat, stirring until it thickens into a smooth custard. Transfer to a dish, cover with plastic wrap, and let cool in the refrigerator for a few hours.
  3. Prepare the Tart Shell:

    • Preheat the oven to 180°C (350°F).
    • Roll out the dough on a floured surface slightly larger than your tart pan. Press it into the pan, trimming the excess at the edges.
    • Prick the bottom of the dough with a fork and chill in the fridge for 10 minutes.
    • Bake the crust for about 20-25 minutes until golden. Allow it to cool completely.
  4. Assemble the Tart:

    • Spread the cooled custard evenly over the tart crust.
    • Decorate with strawberries and blueberries in a circular pattern.
