Green Rice with Celery – Recipe and Preparation Method
Green Rice with Celery is a light dish that can be served for lunch. It is characterized by its delicious taste and appetizing aroma, and it is rich in nutrients due to its balanced nutritional components. It is easy to prepare and does not require much time or effort.
Ingredients for Green Rice with Celery:
- 2 cups of Basmati rice
- 3 stalks of celery
- 1 cup of fresh coriander (if unavailable, parsley can be used instead)
- 3 tablespoons of butter
- 1/4 teaspoon of whole cumin
- 1/4 teaspoon of whole fennel seeds
- 1/4 teaspoon of dried coriander
- 1/4 teaspoon of mustard seeds
- 1 green chili pepper, finely chopped
- 1.5 teaspoons of salt
- 1/4 teaspoon of finely ground black pepper
- 1/4 teaspoon of turmeric
For Serving:
- 2 tablespoons of ghee (vegetable or animal-based, as preferred)
- 3 cloves of garlic, sliced thinly
- 2 tablespoons of crushed almonds
For Garnishing:
- 1/2 cup of fried onion
Preparation Steps:
Prepare the Rice: Rinse the rice multiple times and soak it in hot water for 15-30 minutes. After soaking, wash the celery leaves thoroughly, chop the stalks finely, and set them aside.
Blend the Celery and Coriander: In a blender, combine the celery leaves, coriander, and half a cup of lukewarm water. Blend on medium speed until you achieve a thick green liquid. If the mixture is too thin, add a little more water to thicken it.
Cook the Base: In a medium-sized pot, melt the butter over medium heat. Add the cumin, fennel seeds, dried coriander, and mustard seeds. Stir well for a few minutes until fragrant, then add the finely chopped celery stalks and the chopped green chili. Cook until the celery is tender.
Combine Ingredients: Pour the thick green mixture into the pot. Add salt, turmeric, black pepper, and 2 cups of lukewarm water. Bring the mixture to a boil.
Cook the Rice: Once boiling, add the soaked rice. Allow it to boil for 2-3 minutes to absorb the flavors, then cover the pot and reduce the heat to low. Let it cook until the rice is fully done.
Prepare the Topping: In a wide skillet, heat the ghee until hot. Add the sliced garlic and crushed almonds, stirring until they turn golden brown.
Serve: Once the rice is done, transfer it to a serving dish. Top it with the garlic and almond mixture, and garnish with fried onions. Serve hot.
