Grilled Asparagus with Pine Nuts – Recipe and Preparation Method
Grilled asparagus with pine nuts is a healthy main dish that can be served for lunch. It is known for its delicious taste, high fiber, and vitamin content, making it a perfect choice for athletes and those following a diet due to its low-calorie count.
This dish is easy to prepare, requiring 30 minutes for preparation and 30 minutes for cooking, serving two people.
Main Ingredients for Grilled Asparagus with Pine Nuts:
- 2 tablespoons of pine nuts
- 1 large bundle of fresh asparagus (approximately 500 grams)
- 1 large leek, thinly sliced
- 2 teaspoons of olive oil
- 1 teaspoon of salt
- ¼ teaspoon of ground black pepper
- ¼ cup of vinegar
Preparation Method:
Toasting the Pine Nuts: Preheat the oven to 180°C (356°F). Spread the pine nuts on a baking tray and place it on the middle rack of the oven. Roast the pine nuts for 7-10 minutes until they turn light golden. Remove from the oven and set aside in a small bowl for later use.
Preparing the Asparagus: Trim the tough ends off the asparagus spears and place them in a medium bowl. Add the thinly sliced leeks, olive oil, ¾ teaspoon of salt, and black pepper. Mix well using a wide plastic spoon until all the ingredients are evenly coated.
Roasting the Asparagus: Spread the asparagus mixture onto the same baking tray used for the pine nuts. Preheat the oven to 220°C (428°F), place the tray on the middle rack, and roast for 10-15 minutes. Halfway through the cooking time, remove the tray, stir the asparagus, and return it to the oven to ensure even cooking.
Preparing the Vinegar Mixture: In a small saucepan, combine the vinegar and the remaining salt. Bring the mixture to a boil over medium heat. Once boiling, reduce the heat to low and let it simmer for about 5 minutes until it thickens slightly.
Serving: Remove the asparagus from the oven and transfer it to a serving dish. Drizzle the vinegar mixture evenly over the asparagus to enhance the flavor. Sprinkle the toasted pine nuts on top and serve immediately while hot.
