  • 2 large chicken fillets
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon ground cardamom
  • ½ teaspoon paprika
  • ½ teaspoon oregano
  • ½ teaspoon crushed chili flakes
  • ½ teaspoon dried coriander
  • ½ teaspoon cumin
  • ½ teaspoon turmeric
  • 1 teaspoon salt
  • ¼ teaspoon ground black pepper
  • 1 tablespoon tomato paste
  • 2 tablespoons olive oil
  • 2 tablespoons honey

Preparation Method:

  1. Prepare the Chicken: Slice the chicken fillets horizontally using a sharp knife. Place each piece in a plastic bag and gently pound with a meat mallet until thin. Repeat with all chicken slices.

  2. Mix the Spices: In a large bowl, combine the black pepper, turmeric, salt, cumin, coriander, crushed chili, oregano, paprika, ground cardamom, onion powder, and garlic powder. Stir with a large plastic spoon to mix the spices evenly.

  3. Prepare the Marinade: In a large cup, mix the tomato paste, olive oil, and honey until combined.

  4. Season the Chicken: Sprinkle ¼ of the spice mix and ¼ of the marinade on one side of the chicken slices. Flip the slices and repeat on the other side with another ¼ of the spices and marinade. Return the chicken to the plastic bag and gently pound with the meat mallet again to ensure the flavors are absorbed.

  5. Grill the Chicken: Heat a wide, heavy-bottomed skillet lightly brushed with oil over medium heat. Add the chicken fillets, cooking until they turn light golden brown on both sides.
