  • 1 cup all-purpose flour
  • 1 cup semolina
  • ½ teaspoon instant yeast
  • 1 cup warm water
  • ¾ cup olive oil
  • 50 grams fenugreek seeds
  • ¼ cup fenugreek water
  • ½ cup fine sugar

Ingredients for Syrup:

  • 2 cups fine sugar
  • 1 cup warm water
  • 1 cinnamon stick

Preparation Method:

  1. Prepare the Fenugreek Seeds: Soak the fenugreek seeds in a small bowl with a cup of warm water for about 20 minutes. Drain the seeds, place them in a medium-sized pot, and add a little water. Bring to a boil over medium heat and cook until the seeds are fully softened.

  2. Prepare the Yeast Mixture: In a small cup, dissolve the yeast in three tablespoons of water, stir well, and set aside for a few minutes until the mixture ferments.

  3. Make the Dough: In a large bowl, mix the flour and semolina with a plastic spoon. Gradually add the olive oil, stirring continuously until all the oil is incorporated. Add the dissolved yeast mixture, then knead the mixture with your fingers for about 3 minutes until a cohesive dough forms. Gradually add the fenugreek water, kneading continuously, until you achieve a smooth dough.

  4. Shape and Bake: Grease the baking tray with a little oil using a brush to prevent sticking. Spread the dough evenly in the tray, then cut it into diamond shapes or any desired pattern. Preheat the oven to 180°C, place the tray on the middle rack, and bake for 15-18 minutes until the surface turns light golden.

  5. Prepare the Syrup: In a medium-sized pot, combine the sugar, water, and cinnamon stick. Stir continuously over medium heat until the sugar dissolves. Bring to a boil, then cook on high heat for 10 minutes. Remove from the heat and let it cool completely.

  6. Final Steps: Once the halva is out of the oven, pour the cooled syrup over the hot dessert and serve immediately.
