  • Around 1 liter of boiling water
  • ½ tablespoon of salt
  • 2 cups of flour
  • 1 small cup of oil
  • 2 tablespoons of melted animal ghee
  • A few whole dates for garnish
  • 2 tablespoons of rose water or orange blossom water

How to Prepare Asida with Dates:

  1. Soak the Dates: In a deep pot, place the pitted dates and pour in enough boiling water to fully submerge them. Stir well and leave them to soak for at least an hour.

  2. Blend the Dates: After soaking, transfer the dates along with the water into a blender. Blend until smooth and creamy, depending on your blender’s power.

  3. Cook the Date Mixture: Pour the blended mixture into a pot and place it over low heat. Stir gently, then add 1 cup of boiling water, and ½ tablespoon of salt to balance the flavors. Stir continuously and let the mixture simmer.

  4. Add the Flour: Gradually sift in the flour while stirring constantly to prevent lumps. As the mixture thickens, you may need to add an additional cup of boiling water to keep the consistency smooth and soft.

  5. Simmer the Mixture: Keep stirring over low heat until the mixture becomes creamy and smooth. Add 2 tablespoons of rose water or orange blossom water, and stir well.

  6. Incorporate the Oil: Add the mentioned amount of oil to the mixture and stir for another 2 minutes. Once it’s fully blended and creamy, turn off the heat.
