Main Ingredients for Haytaliyeh with Mastic and Pine Nuts:

Haytaliyeh with Mastic and Pine Nuts

  • ¼ cup of cornstarch
  • ½ cup of water
  • 4 cups of liquid milk
  • 4 teaspoons of rose water
  • 4 teaspoons of orange blossom water
  • 4 teaspoons of fine granulated sugar
  • A pinch of ground mastic
  • 1 cup of syrup
  • 1 teaspoon of crushed pistachios
  • 1 teaspoon of crushed pine nuts
  • 2 teaspoons of thinly sliced almonds

Preparation Method:

  1. Preparing the Mixture: In a large, deep pot, add the water and cornstarch, placing it over medium heat. Stir continuously with a hand whisk for several minutes until the cornstarch dissolves completely. Add the milk and sugar, stirring well to combine all the ingredients. Reduce the heat to low and let the mixture simmer for 20 minutes until it becomes thick and well combined.

  2. Add the ground mastic, stir briefly, and let the mixture cook for another 5 minutes to infuse the mastic flavor. Gradually add the rose water and orange blossom water, stirring for 2 more minutes, then turn off the heat and let the mixture cool.

  3. Once cooled, pour the mixture into individual serving dishes and place them in the fridge for 6 hours (preferably overnight) to achieve a firm and thick texture.

  4. Serving: Remove the dishes from the fridge and garnish each plate with sliced almonds, crushed pine nuts, and crushed pistachios in a beautiful and balanced way. Finally, drizzle 1 tablespoon of syrup over each dish (adjust to taste) and serve immediately while cold.

Enjoy your refreshing Haytaliyeh with mastic and pine nuts, hoping it adds a delightful touch to your summer gatherings!
