  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 1/4 cup mustard
  • 6 slices of toast

  • 2 tablespoons finely chopped rosemary
  • 1 tablespoon oregano
  • 1 tablespoon basil
  • 1 teaspoon paprika
  • 1 teaspoon crushed chili
  • 1/2 cup olive oil

  • 3 whole heads of garlic, halved
  • 3 sprigs of fresh rosemary

How to Prepare Herb-Crusted Lamb Leg:

  1. Prepare the Spice Mix:

    • In a small bowl, combine salt, pepper, oregano, basil, paprika, and crushed chili. Mix well with a plastic spoon.
  2. Make the Herb Mixture:

    • In a food processor, place the toast and blend until very fine. Add the spice mix, parsley, olive oil, and rosemary. Blend until everything is combined. If the mixture is too dry, add a bit more olive oil until it reaches a paste-like consistency.
  3. Prepare the Lamb Leg:

    • Place a sheet of parchment paper on a flat surface. Lay the lamb leg on top, sprinkling it with a little salt and black pepper. Rub it with mustard using a wide brush. Spread the toast mixture evenly over the entire surface of the lamb.
  4. Set Up for Grilling:

    • Place a wire rack in a large roasting pan. Put the lamb leg on the rack. Halve the garlic heads (do not peel) and place them under the rack along with the rosemary sprigs. Add 1 cup of water to the pan.
  5. Cooking:

    • Preheat the oven to 220°C (428°F). Place the roasting pan in the middle of the oven and cook for 30 minutes. Then reduce the temperature to 180°C (356°F) and cook for another 90 minutes, or until the lamb is fully cooked.
  6. Resting:

    • Remove the roasting pan from the oven and cover the lamb leg with aluminum foil. Let it rest for 15 minutes to retain moisture before serving.
  7. Serving:

    • After resting, remove the foil and serve the lamb leg hot.
