This article will provide you with a simple and easy method for curing black olives to make them ready to enjoy.

Ingredients for Curing Black Olives:

  • A suitable amount of water (as needed) for soaking the olives before and after curing.
  • 1 teaspoon of coarse salt for each cup of water.
  • 1 kg of fresh black olives.
  • Juice from 2 lemons.
  • Slices of red chili pepper and lemon (optional, according to preference).
  • 2 tablespoons of olive oil (as needed).

Steps to Cure Black Olives:

  1. Prepare the Olives:
    Start by slightly scoring the olives with a knife to allow them to absorb the brine, but choose firm olives and leave the softer ones unscored.

  2. Soak the Olives:
    Divide the olives into two containers and cover them with water. You can cover the containers as desired.

  3. Soak for Five Days:
    Leave the olives soaked in water for five days.

  4. Change the Water:
    After five days, drain the water and refill the containers with fresh water. Repeat this step every two days until the olives are sufficiently cured to your taste.

  5. Prepare the Brine Solution:
    After curing the olives, prepare a brine by mixing 6 cups of water with 6 tablespoons of coarse salt. Stir until the salt dissolves completely.

  6. Brine the Olives:
    Place the olives in the brine solution and let them sit for 24 hours.

  7. Drain and Prepare for Curing:
    After 24 hours, drain the olives from the brine and prepare them for curing.

  8. Pack the Olives in Jars:
    Use two glass jars to pack the olives. Prepare a new brine solution (adjusting the amount according to the jar size) and pour it over the olives in the jars.

  9. Add Lemon Juice and Optional Ingredients:
    Add the lemon juice to the brine and stir well. You may also add slices of red chili pepper if desired.

  10. Seal and Store:
    Pour a little olive oil on top of the jars to seal them, and close the lids tightly.
