Ingredients:
- 2 liters of fresh cow’s milk
- ⅓ cup of white vinegar
- ¼ cup of lemon juice
- A pinch of salt
How to Prepare Delicious Mozzarella Cheese at Home:
Heat the Milk: Start by pouring 2 liters of previously boiled fresh milk into a deep pot. Place the pot over medium heat and stir the milk occasionally to prevent it from burning at the bottom, which would negatively affect the flavor. Heat the milk until it reaches 40°C (104°F). This is the optimal temperature for curdling.
Add the Coagulants: Once the milk reaches 40°C, remove the pot from the heat. Add ⅓ cup of white vinegar, ¼ cup of lemon juice, and a pinch of salt. Stir the mixture gently.
Let the Milk Curdle: Allow the milk to rest for a few minutes. You will notice a transparent liquid forming on the surface, along with curd formation. Let it sit for a few more minutes until the separation between the solid curds and the liquid whey becomes more pronounced.
Collect the Curds: After thoroughly washing your hands (or wearing gloves), use your hands to scoop out the solid curds from the pot. Place the curds in a clean bowl, pressing them to remove as much excess liquid as possible. Squeeze and shape the curds into a round ball.
Refrigerate and Use: Place the ball of mozzarella cheese in the refrigerator to firm up. Once it's firm, you can grate it using a metal grater. Your homemade mozzarella is now ready to use in all your favorite dishes.
