Indian Masala Dosa – How to Cook the Famous Indian Masala Dosa
Masala dosa is a well-known dish from Indian cuisine, like other masala dishes. It consists of delicious stuffed bread rolls made from a unique mixture of ground grains, different from regular bread as it contains no flour. The filling is rich with unique Indian spices.
This recipe serves 5 people.
Ingredients for Dosa Batter:
- 2 cups of Basmati rice
- 1 cup of white lentils
- ½ cup of chickpeas
- ½ teaspoon of salt
- 1 teaspoon of fenugreek seeds
- ¼ teaspoon of sugar
Ingredients for the Filling:
- 2 boiled potatoes, diced into small cubes
- 1 teaspoon of whole cumin seeds
- 1 teaspoon of red pepper flakes
- ¼ teaspoon of ground red pepper
- 1 teaspoon of salt
- ½ teaspoon of black pepper
- 2 tablespoons of oil
- 1 chopped onion
- 1 green chili pepper, finely chopped
- 1 teaspoon of crushed garlic
- ¼ teaspoon of turmeric
- A small cube of butter
How to Prepare Indian Masala Dosa:
Soaking the Grains: First, wash the rice, lentils, and fenugreek seeds in clean water. Soak the rice in lukewarm water for at least 10 hours. In a separate bowl, soak the lentils, chickpeas, and fenugreek seeds in warm water for the same duration.
Grinding the Mixture: After soaking, drain the rice and place it in a blender, gradually adding water until the mixture becomes creamy and thick in texture.
Drain and grind the lentils, chickpeas, and fenugreek seeds with a little water. Add this to the rice mixture and stir well until the batter is smooth and consistent.
Let the batter rest for another 10 hours.
Preparing the Filling: Heat oil in a pan and add the cumin seeds. Once they start to sizzle, add the red pepper flakes and stir. Add the chopped onion and cook until softened, then add the green chili pepper and garlic, stirring well.
Add the diced potatoes, salt, black pepper, ground red pepper, and turmeric. Continue stirring while mashing the boiled potatoes slightly to blend them with the onions.
Remove the pan from the heat and let the filling cool slightly while preparing the dosa.
Making the Dosa: Add sugar and salt to the dosa batter and mix well.
Heat a non-stick pan over medium heat. Pour a small amount of batter onto the pan and spread it out into a thin, circular shape. Once the bottom turns golden, brush the dosa with butter, place some filling in the center, and roll it into a cylindrical shape. Repeat this process until all the batter and filling are used.
Serve the masala dosa on a flat plate while still hot.
