Ingredients for Indian Pakora:



  • 1 cup chickpea flour (besan)
  • ¾ cup room-temperature water
  • ½ tablespoon black pepper
  • ½ tablespoon garam masala (Indian spice blend)
  • ½ tablespoon curry powder
  • 1 sweet potato
  • 1 cup chopped broccoli
  • 1 red onion
  • 2 green onions
  • 2 cups vegetable oil (for frying)

For the Coconut Sauce:

  • ½ cup coconut milk
  • 5 tablespoons sunflower seeds
  • Juice of half a lemon (about 2 tablespoons)
  • ½ tablespoon salt
  • ½ cup chopped cilantro
  • ¼ cup room-temperature water
  • Fresh cilantro for garnish

How to Prepare Indian Pakora:

Preparing the Sauce:

  1. Combine all the ingredients for the sauce (coconut milk, sunflower seeds, lemon juice, salt, cilantro, and water) in a blender.
  2. Blend on high speed until the sauce is smooth and creamy. If needed, add a few more drops of water to thin it.
  3. Pour the sauce into a bowl and set aside.

Making the Pakora:

  1. Peel and chop the sweet potato into small pieces. Boil them in a pot of water until they are soft and tender.
  2. While the sweet potatoes are boiling, chop the broccoli into small pieces, and dice the red and green onions.
  3. In a large mixing bowl, combine the chickpea flour, black pepper, salt, garam masala, and curry powder. Stir in the boiled sweet potatoes, broccoli, and onions.
  4. Mix everything thoroughly until well combined and the vegetables are evenly coated with the flour mixture.
  5. Heat the vegetable oil in a deep pan or pot over medium heat.
  6. Using a spoon, scoop portions of the mixture and carefully drop them into the hot oil. Fry the pakora until golden and crispy on both sides.
  7. Remove the pakora from the oil and drain them on paper towels to remove excess oil.

Serving:

  1. Place the crispy pakoras on a serving plate and drizzle them with the coconut sauce.
  2. Garnish with fresh cilantro leaves for extra flavor.
  3. Serve hot and enjoy!
