Ingredients for Indian Pakora:
- 1 cup chickpea flour (besan)
- ¾ cup room-temperature water
- ½ tablespoon black pepper
- ½ tablespoon garam masala (Indian spice blend)
- ½ tablespoon curry powder
- 1 sweet potato
- 1 cup chopped broccoli
- 1 red onion
- 2 green onions
- 2 cups vegetable oil (for frying)
For the Coconut Sauce:
- ½ cup coconut milk
- 5 tablespoons sunflower seeds
- Juice of half a lemon (about 2 tablespoons)
- ½ tablespoon salt
- ½ cup chopped cilantro
- ¼ cup room-temperature water
- Fresh cilantro for garnish
How to Prepare Indian Pakora:
Preparing the Sauce:
- Combine all the ingredients for the sauce (coconut milk, sunflower seeds, lemon juice, salt, cilantro, and water) in a blender.
- Blend on high speed until the sauce is smooth and creamy. If needed, add a few more drops of water to thin it.
- Pour the sauce into a bowl and set aside.
Making the Pakora:
- Peel and chop the sweet potato into small pieces. Boil them in a pot of water until they are soft and tender.
- While the sweet potatoes are boiling, chop the broccoli into small pieces, and dice the red and green onions.
- In a large mixing bowl, combine the chickpea flour, black pepper, salt, garam masala, and curry powder. Stir in the boiled sweet potatoes, broccoli, and onions.
- Mix everything thoroughly until well combined and the vegetables are evenly coated with the flour mixture.
- Heat the vegetable oil in a deep pan or pot over medium heat.
- Using a spoon, scoop portions of the mixture and carefully drop them into the hot oil. Fry the pakora until golden and crispy on both sides.
- Remove the pakora from the oil and drain them on paper towels to remove excess oil.
Serving:
- Place the crispy pakoras on a serving plate and drizzle them with the coconut sauce.
- Garnish with fresh cilantro leaves for extra flavor.
