For the Dough:

  • 2½ cups of all-purpose flour
  • 1 teaspoon of salt
  • 1 tablespoon of vegetable shortening (ghee or margarine)
  • 2 tablespoons of sunflower oil
  • ½ teaspoon of turmeric powder
  • ¾ cup of warm water

For the Filling:

  • 2 tablespoons of vegetable shortening (ghee or margarine)
  • 2 teaspoons of ground cumin
  • 3 cloves of garlic, finely minced
  • 1 green chili pepper
  • 1 tablespoon of ginger powder
  • 4 boiled potatoes
  • 2 tablespoons of mixed spices (such as garam masala)
  • 1 teaspoon of dried coriander
  • 1 teaspoon of crushed red pepper flakes
  • 1 teaspoon of salt
  • ¼ teaspoon of ground black pepper
  • 1 cup of green peas
  • 2 tablespoons of freshly squeezed lemon juice

For Frying:

  • A generous amount of sunflower oil

Steps to Prepare Indian Vegetable Samosas:

  1. Preparing the Dough:
    Dissolve the turmeric in the warm water and set it aside. In a stand mixer, combine the flour and salt, mixing on medium speed. Add the vegetable shortening (or ghee) and oil, and continue mixing until the dough begins to crumble. Gradually add the turmeric water mixture while mixing until you get a thick dough.

  2. Resting the Dough:
    Remove the dough from the mixer, place it in an oiled bowl, and cover it tightly with plastic wrap. Let it rest in a warm place for about 30 minutes.

  3. Preparing the Filling:
    Heat the vegetable shortening in a thick-bottomed skillet. Once melted, add the ground cumin, minced garlic, green chili, and ginger powder. Stir the ingredients until the garlic softens and becomes fragrant.

  4. Adding the Vegetables:
    Mash the boiled potatoes by hand and add them to the skillet, stirring them with the other ingredients. Then, add the mixed spices, dried coriander, crushed red pepper, salt, and black pepper. Stir for a few minutes to allow the flavors to blend. Finally, add the lemon juice and peas, and turn off the heat. Allow the mixture to cool completely before using it.

  5. Shaping the Samosas:
    Divide the dough into 10 small balls and let them rest for 10 minutes. Roll each ball into an oval shape using a rolling pin, then cut each oval into two halves. Place a small portion of the vegetable filling in the center of each piece and fold the dough to form a triangular shape. Seal the edges tightly to prevent the filling from spilling out. Repeat this process with the remaining dough and filling.

  6. Frying the Samosas:
    Heat a generous amount of sunflower oil in a deep skillet over medium heat. Once the oil is hot, fry the samosas in batches, turning them occasionally to ensure they are evenly browned on all sides. Once they turn golden brown, remove them from the oil and place them on parchment paper to drain the excess oil.

  7. Serving:
    Arrange the samosas on a serving plate and serve them hot.
