For the Kibbeh Dough:
- 1 ¾ cups of bulgur, soaked for 60 minutes
- 500 grams of ground meat (for the dough)
- 1 onion, finely chopped
- 1 tablespoon of dried mint
- 1 teaspoon of salt and cumin
- ¼ teaspoon of ground cinnamon and black pepper
For the Filling:
- 2 tablespoons of vegetable oil
- 2 onions, finely chopped
- 500 grams of finely ground meat
- A small amount of meat broth
- ½ teaspoon of mixed spices
- 3 tablespoons of pine nuts
- 1 tablespoon of pomegranate molasses and dried mint
How to Prepare Iraqi Bulgur Kibbeh
In a food processor, blend the soaked bulgur, ground meat, and dried mint until well combined.
Add a small amount of salt, black pepper, cinnamon, and cumin to the mixture, and continue mixing until all ingredients are fully incorporated.
Place the mixture in the fridge for at least 30 minutes.
To prepare the filling, heat oil in a pan, then add the finely chopped onions and sauté until they soften.
Add the ground meat, broth, mixed spices, dried mint, and salt to the pan, stirring everything together.
Cook the filling until the meat is fully cooked. Remove the pan from heat, then stir in the pine nuts and pomegranate molasses.
Remove the kibbeh dough from the fridge and divide it into equal-sized balls.
Take one of the balls and hollow it out to create space for the filling. Stuff it with the prepared meat filling, then seal the opening. Repeat this process until all the kibbeh dough is used.
Fry the kibbeh in hot oil until they turn a golden brown color.
