Iraqi Datli is one of the most popular and widely enjoyed desserts in Iraq. It is especially common during the holy month of Ramadan. In some regions of the Levant, this dessert is known as Awwama or fried apricots, and it is equally popular there.

Ingredients for Iraqi Datli Dessert
For the syrup:
- 1 ½ cups of sugar
- ¼ teaspoon of ground cardamom
- A moderate amount of lemon juice
For the dough:
- 2 ½ cups of water
- 2 ¼ cups of flour
- ⅓ cup of syrup (without cardamom)
- ⅓ cup of melted butter
- Enough vegetable oil for frying
- A pinch of salt, as desired
How to Prepare Iraqi Datli Dessert
Begin by preparing the syrup. In a suitable pot, add water and place it over low heat, waiting for it to boil thoroughly.
Once boiling, add the sugar and let it boil for five minutes. Then, add the chosen amount of lemon juice and let it boil for another two minutes.
Take ⅓ cup of syrup (without cardamom) and set it aside. Return the rest of the syrup to the heat, add the ground cardamom, and allow it to boil for one more minute before removing it from the heat to cool.
For the dough:
Place water in a suitable pot over medium heat and bring it to a boil. Add the butter and the reserved syrup, then bring it to another boil.
Remove the pot from the heat and gradually add the flour, stirring well to ensure the mixture is smooth and without lumps, forming a firm dough.
Shape the dough into medium-sized fingers and place them into a pastry bag.
In a frying pan, heat the selected amount of vegetable oil over medium heat. Drop the dough fingers into the hot oil.
Stir the dough fingers in the oil until they turn light golden. Remove them from the oil and immediately immerse them in the cooled syrup.
After soaking in the syrup, remove the Datli fingers and place them directly on a serving plate.
